Spinach & Feta Egg Muffins
📝 Ingredients (Makes 10–12 muffins)
- 8 large eggs
- 1 cup fresh spinach, chopped (or ¾ cup frozen, thawed & squeezed dry)
- ½ cup feta cheese, crumbled
- ¼ cup milk (optional, for fluffier muffins)
- 1 small onion, finely chopped (optional)
- 1–2 garlic cloves, minced (optional)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- Olive oil or butter (for sautéing & greasing)
🔥 Instructions
1. Prep the Oven
Preheat your oven to 180°C (350°F).
Lightly grease a muffin tin or use silicone cups.
2. Cook the Veggies (optional but recommended)
- Sauté onion in a little oil or butter until soft.
- Add spinach and garlic. Cook until wilted.
- Let cool slightly.
3. Make the Egg Mixture
In a bowl:
- Whisk eggs.
- Add milk (if using), salt, pepper, and paprika.
- Stir in spinach mixture.
- Add crumbled feta.
4. Fill the Muffin Tin
Pour mixture into each muffin cup, filling about ¾ full.
5. Bake
Bake for 18–22 minutes, until fully set and slightly golden on top.

Enjoy warm, or let cool and store in the fridge for up to 4 days.
They also freeze well for up to 2 months.
