Spinach & Feta Egg Muffins

📝 Ingredients (Makes 10–12 muffins)

  • 8 large eggs
  • 1 cup fresh spinach, chopped (or ¾ cup frozen, thawed & squeezed dry)
  • ½ cup feta cheese, crumbled
  • ¼ cup milk (optional, for fluffier muffins)
  • 1 small onion, finely chopped (optional)
  • 1–2 garlic cloves, minced (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • Olive oil or butter (for sautéing & greasing)

🔥 Instructions

1. Prep the Oven

Preheat your oven to 180°C (350°F).
Lightly grease a muffin tin or use silicone cups.


2. Cook the Veggies (optional but recommended)

  • Sauté onion in a little oil or butter until soft.
  • Add spinach and garlic. Cook until wilted.
  • Let cool slightly.

3. Make the Egg Mixture

In a bowl:

  1. Whisk eggs.
  2. Add milk (if using), salt, pepper, and paprika.
  3. Stir in spinach mixture.
  4. Add crumbled feta.

4. Fill the Muffin Tin

Pour mixture into each muffin cup, filling about ¾ full.


5. Bake

Bake for 18–22 minutes, until fully set and slightly golden on top.


🍽️ Serve

Enjoy warm, or let cool and store in the fridge for up to 4 days.
They also freeze well for up to 2 months.
