Ingredients

For the Coconut Filling

  • 3 cups shredded sweetened coconut
  • 1 cup sweetened condensed milk
  • ½ cup powdered sugar

  • Pinch of salt

For the Chocolate Coating

  • 2 cups chocolate chips (milk or dark)
  • 1 tbsp coconut oil or butter (optional, for smooth dipping)

1. Make the Coconut Mixture

  1. In a bowl, mix together:
    • shredded coconut
    • sweetened condensed milk
    • powdered sugar
    • vanilla
    • salt
  2. Stir until a thick, sticky dough forms.

2. Shape the Balls

  1. Scoop about 1 tablespoon of mixture.
  2. Roll into balls or shape into small bars (like the photo).
  3. Place on a parchment-lined tray.
  4. Freeze for 20–25 minutes — this helps them stay firm when dipping.

3. Coat With Chocolate

  1. Melt chocolate (and coconut oil if using) in the microwave in 20–30 second intervals, stirring until smooth.
  2. Dip each frozen coconut ball into the chocolate.
  3. Place on parchment to set.
  4. Optional: drizzle extra chocolate on top for the same pretty look as the picture.

4. Chill & Serve

  • Refrigerate 10–15 minutes until chocolate is set.
  • Store in fridge up to 1 week, or freeze up to 2 months.
